This is breakfast on days 1 and 4 on Meal Plan 10

Serves 2
2 eggs, Asda 70p/6, 23p
120g value flour, 45p/1.5kg, 4p
tsp dried herbs, or tblsp fresh if you have them, 25p pot, 2p?
15ml oil (a tblsp) £1.10/litre, 2p
Total cost 31p, 15p per serving

Per serving 346 cals, 12g protein, 45g carbs, 13g fat, 2 g fibre

Heat a wide topped saucepan with an inch, 2.5 cm water and bring to a gentle boil, we don’t want vigorous bubbling here. Break an egg into a cup and tip gently into the pan. Repeat with the other egg. Simmer for 2 minutes. Remove from the heat, cover and leave for 10 minutes.

In the meantime, make your pancakes. If using fresh herbs, chop them finely. Fresh or dried, mix the herbs with the flour, add salt and pepper. Mix in enough water to make a thick batter. Heat a frying pan and add the oil.

Drop in spoonfuls of batter and cook gently until the upperside is set. Flip over and brown the other side. Keep warm if necessary.

When the 10 minutes are up, remove each poached egg from the hot water with a slotted spoon and drain carefully on a folded tea towel or kitchen roll.

Serve immediately with the pancakes.

If you don’t want to poach eggs this way, you could use poaching pods. Lakeland have some good ones.

    oh, interesting. I’ve tried doing eggs in the microwave before and just exploded them, even when I did it a few seconds at a time. I’ll have to try it using the immerse in water model

    For those in a rush I hope it’s not too outrageous to suggest that there is a quick way to poach an egg in the microwave that produces much the same result:

    Crack the egg into a very small bowl or a large cup of water and heat in the microwave for 1 minute on full power.

    You can simmer for a few minutes, or turn the heat off and let the hot water cook them. It’s the way I’ve been doing them for a while. I learned it from Delia
