Peanut butter and jam mug cake, mmm, too easy

I was inspired to try this pudding this evening by Skint Mum over on the Skint Dad blog who made a chocolate mug cake.

DP is mad on peanut butter on toast at the moment, so I made this peanut butter and jam version.

I used a large mug and put into it
2 tbslp sugar
2 tblsp sr flour
2 tblsp crunchy peanut butter
1 egg
1 tblsp oil
1 tblsp milk

Mix it all together with a spoon. Then drop in a tblsp of jam

Cook for one and a half minutes in the microwave. Drop a tbslp of ice cream on the top and devour immediately.

DP made a good suggestion, a Snickers version, so add some chocolate from a value bar and a few salted peanuts. Would be yum!

Loads of other variations obviously. A tblsp or 2 of dried fruit, mixed, apricot, date and walnut, dried cranberries. Dark, milk or plain chocolate from a value bar. A blob of golden syrup or any flavour jam in the bottom, chopped preserved ginger. Have a look in the cupboard, see what you’ve got.
